On Tuesday, the Division of Student Development and Enrollment Services launched the university’s first-ever food truck that serves healthy food options as well as cooking demonstrations.

“We care about the well-being of our students and we want them to discover the benefits of eating and living healthy,” said Maribeth Ehasz, vice president for student development and enrollment services.

“Our new mobile kitchen will provide information about a variety of healthy eating options. We will also host cooking demos and training by our health experts.”

The grand opening took place on Memory Mall and highlighted five different cooking demos in a bistro-style environment by Wellness and Health Promotion Services staff every hour from 10 a.m. to 3 p.m. SGA President Christopher Clemente addressed the crowd with photo opportunities and chances to win prizes.

The events are open to all students on a first-come-first-serve basis and while supplies last.

Tuesday’s schedule of events:

  • 10 a.m. – Grand Opening Ceremony
  • 10 a.m. – BEC (broccoli, egg and cheese) Mini Muffin
  • 11 a.m. – Black Bean Dip
  • Noon – Southwest Quinoa Salad
  • 1 p.m. – Vegetarian Chili
  • 2 p.m. – Green Smoothies and Power Bars

The food truck will continue to service students at various locations throughout the year.
